Campora - Rosso di Toscana IGT 2016
This world-renowned wine comes from the original experimental vineyard of 1980 at Casale in San Gimignano. In this particular vintage 2016 it has been aged for about 60 months; this is where the wine gains the structure and the elegance it is noted for. The Campora, properly stored, can be refined in the bottle for 15-20 years.







Tasting Notes
Intense and deep ruby red color. The aroma is broad and overwhelming, with distinct notes of blackberry and bramble fruits, complemented by fine hints of quinine, bay leaves, sweet tobacco, and mentholated leaves. The wine expresses freshness, with noble and present tannins, offering an intense, smooth flavor with great persistence, development, and harmony.
Why We Like It
This wine was born in 1985 and began the history of the great Super Tuscan wines of San Gimignano. It is produced almost entirely from hand-harvested Cabernet Sauvignon grapes, carefully selected. After completing fermentation in temperature-controlled steel vats, it is aged in 225-liter French oak barriques for at least 60 months for this particular vintage, where it develops its long-lasting structure and great elegance.
It then rests in the bottle for at least another 24 months in the cellar before being released to the public.
The Campora is a wine of great harmony, remarkable depth, and complexity, with surprising longevity.
Pairing Suggestions
It pairs beautifully with stewed veal, game and grilled meats accompanied by truffles or seasonal mushrooms. Also excellent with fine pecorino and cow's milk cheeses, aged and particularly with blue-veined goat cheeses. At the end of a meal, it can also be enjoyed as a meditation wine, paired with dark chocolate.
